             CAN A HOUSEWIFE ACHIEVE  AN                  
                          INNER-PEACE?



As I was returning from my blissful outing with a dear friend I was listening to His Holiness Dalai Lama on Deepac Chopra's radio show. There was also another fantastic speaker from Iran, Nobel laureate Shirin Enadi. They were discussing peace in the world and how it starts with everyone achieving inner-peace first.
All brilliant points. I came home and had a discussion over dinner with my family  on how violent language used against others can stop one from achieving an inner-peace along with video games and cruel movies. I refrained from mentioning the importance of regular meditation since the oldest of four present children just turned 13 and I would have been entering totally different ground.
I was actually amazed with how well it went. Even the 4 year old had something to say against bad words.
They tried to maintain inner-peace through after-dinner clean up though the opposition against a "cheater" who conveniently "went to the bathroom" was verging on civil war. During dessert the war was still in full force with the danger of weapons (pillows) coming into play, and when I announced that there will be no movie tonight they all ran to get a guillotine! Sorry, your Holiness - I tried!

        KIM'S FANTASTIC TUNA BURGERS


Hi sweetie,

Here's the recipe...

CRUNCHY TUNA BURGERS
1 to 1-1/4 pounds fresh, sushi-grade tuna, coarsely chopped
1/4 cup chopped chives
2 tbsp. Tamari
3 cloves garlic, finely chopped
Pepper
1 cup panko breadcrumbs
2 tbsp. black sesame seeds
1/4 cup vegetable oil
Rolls (brioche or potato hamburger buns)
Mayo (mixed with chopped garlic)
Romaine lettuce
Red onion slices (optional)
Avocado slices (optional)

Add the tuna to a food processor and pulse to grind.  Transfer to a bowl and stir in the chives, tamari, garlic and pepper to taste.  Form the tuna mixture into patties.  Place the breadcrumbs and sesame seeds in a bowl.  Coat the patties in the breadcrumbs mixture.

In a large skillet, heat the oil over medium-high heat.  Add the patties and cook until lightly golden brown on the outside and pink in the middle, about 2 minutes per side.

Transfer to the buns and garnish with the mayo, lettuce, onion and avocado.
